Make Vegetables Less Boring

Vegetables are an important component of any diet. Sometimes, you may get tired of just boiling them in a pot and serving them steamed. Fear not, because you can get creative cooking vegetables, while still ensuring they are healthy. Here are a few ways to “spice” up your veggies.

Roasted Garlic Lemon Broccoli

This is a great side to serve with grilled meats or fish, or even pasta. For those who don’t like sour tastes, you can reduce the amount of lemon juice to 1/4 of a teaspoon or a light squeeze from a fresh lemon.

Time Needed: 25 minutes

Serves: 6

Ingredients:

  • 2 heads of broccoli, with florets separated
  • 2 tsp. of extra virgin olive oil
  • 1 tsp. of sea salt
  • 1/2 tsp. of ground black pepper
  • 1 garlic clove, minced
  • 1/2 tsp. of lemon juice

Directions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Grab a large bowl and toss the broccoli florets with olive oil, salt, pepper, and garlic.
  3. Spread the broccoli evenly on a baking sheet and bake for 15-20 minutes, or until you can stick a fork through the stem.
  4. Transfer broccoli over onto a serving plate, and squeeze lemon juice before serving.

Roasted Carrots

This is an easy dish that packs a lot of flavor. Note that the cilantro, dill, lemon juice, and salt are optional to use in this recipe.

Time Needed: 30 minutes

Serves: 2-3

Ingredients:

  • 8 carrots, cut into 1 inch sticks
  • 1 chopped onion
  • 1 tbsp. of walnut oil
  • 1/8 tsp. of allspice
  • 1/4 c. of raisins
  • 1/4 c. of water
  • 1/4 c. of chopped walnuts
  • 1/4 tsp. of lemon juice (optional)
  • 1 pinch of cilantro (optional)
  • 1 pinch of dill (optional)
  • 1 pinch of salt (optional)

Directions:

  1. Preheat oven to 425 degrees Fahrenheit.
  2. In a small bowl, toss carrots with onion, walnut oil, allspice, and salt.
  3. Transfer to baking sheet to roast for 10 minutes.
  4. Soak raisins in water while carrots cook.
  5. Take carrots out to add raisins and walnuts. Cook for another 10 minutes.
  6. Season with cilantro, dill, lemon juice, and/or salt before serving.

Cajun Green Beans

Spicy food fans, this is the vegetable dish you’ve been waiting for. This recipe is flexible with the amount of spice to add in, and you can use some salt to make it sweeter.

Time Needed: 15 minutes

Serves: 4-5

Ingredients:

  • 1 lb. of green beans
  • 1 1/2 tbsp. of grapeseed or olive oil
  • Cajun seasoning (pinch for not so spicy, 1 tsp. for spicy, 1 tbsp. for very spicy)

Directions:

  1. Cut green beans into bite sized pieces.
  2. Heat oil in a non-stick pan. Add green beans and sauté for one minute.
  3. Add in seasoning.
  4. Cook until green beans are slightly crisp. Your fork should be able to pierce through, but still have a crunchy feeling.

Grilled Tomatoes

Despite their squishy consistency, tomatoes can be grilled with a little extra work. This can be a great way to use up a surplus of tomatoes if you grow your own.

Time Needed: 20-25 minutes

Serves: 2

Ingredients:

  • 2 firm, ripe tomatoes
  • Olive oil
  • Salt
  • Black pepper
  • 4 thinly sliced basil leaves

Directions:

  1. Start by cutting your tomatoes in half.
  2. Stand over a sink and use your fingers to remove the watery pulp and seeds (note that this flavor will be lost anyway when you grill them).
  3. Take your tomatoes outside and preheat your grill on high.
  4. Season each one with salt and pepper, and use a brush to apply olive oil.
  5. Place the tomatoes face down on the grill. Use a fine grill grate or grill pan.
  6. Cook for four minutes, and roll your basil leaves like a cigar while the tomatoes cook.
  7. Remove your tomatoes from the grill using a metal spatula. Place on a serving dish and drizzle once again with olive oil and add basil to the side.
  8. Enjoy!
